Grilled Onion + cauliflower mash

This is one of my go-to Thanksgiving recipes that I really wanted to share. I hope you love it as much as I do. Cauliflower is a surprisingly amazing substitute for potatoes. I dare anyone not to love these!

Grilled Onion & Cauliflower Mash

Ingredients

  • 1 head cauliflower (chopped)

  • 2-3 tablespoons cooking fat (butter, ghee, avocado, oil or coconut oil - your choice)

  • 2 yellow onions, sliced into thin half moons

  • Sea salt and black pepper to taste

  • Optional: 1-3 tablespoons chicken or vegetable stock to thin .

  • Optional: 2-3 cloves garlic minced (cook with the onions)

  • Optional: 1-2 potatoes, chopped (steam with the cauliflower)

Directions

  1. Thinly slice 2 yellow onions and sauté in cooking fat of choice over medium low heat until caramelized. Note: this can take a while- you don't want them burnt, but really nice and brown.

  2. While the onions cook, place several inches of water in a large pot. Place steamer basket in pot and add chopped cauliflower.

  3. Turn heat to high, cover, and steam the cauliflower until very soft.

  4. In a food processor, add in the steamed cauliflower, caramelized onions (make sure to get the cooking fat in there too), and a generous amount of sea salt and black pepper.

  5. Add salt/pepper/broth/ cooking fat to taste.
